I think its futile to ask which version is more authentic but its a matter of your preference of Teochew (Pepper based), Hokkien ( White, black Herbal base) or Kluang Style ( Malaysia's darker Herbal base) and they are all nice in their own right. What separates the stores from good and bad is how they cook the pork ( of course not overcooking or uncooking it) and how 'clean' the innards served are and in some places who serve them, how 'bouncy' the blood curds are to the bite.
